Early on in the history of transmissions, during the 1980s, paddle switches were called flappy paddles. These days, they're called paddle shifters. What a paddle switch is, is a lever, located on the steering wheel, that can override the pre-programmed shift points on an automatic or continuously variable transmission (an AT or a CVT). In other words, it's a stand-in for the gear shift lever, one that enables quickly getting into a preferred gear (or, on a CVT transmission, which lacks traditional gears, getting into a preferred mode).
How paddle switches work is straightforward. One paddle upshifts, while the other downshifts. Most often, "+/-" or "up/down" markers indicate which is which. On most transmissions, gear or mode changes can only be made while the car is in drive (D), and one at a time. How quickly they can be made, however, depends on the gearbox.
In short, a paddle switch gives you the choice to either let the car run in auto mode or take control of it when you want to. This makes it great for everything from cornering to performance driving and even towing downhill. Either way, it means better control in situations where you need it.
